I sure do. Unfortunately it seems we only have a good feed of it a couple times a year and mostly in the winter when those kind of meals done in the crockpot seem to taste soooo good and warm you up from the winter cold.This morning I got up and decided to make a small seafood chowder since the wife was working and I'm off until Monday night and I wanted to keep on her good side for a while. (lots of antenna work to be done soon)
I knew we already had lots of scallops and shrimp in the freezer so I headed off to the store to pick up some chowder mix and a few other types of fish to include like salmon,crab flavored pollock, canned crab, and haddock. I looked at the lobster meat and thought when I saw the price but then remembered we still had some lobster meat in the fridge from a big feed last week.
So I got home and got busy chopping the potatoes and carrots and getting them on to cook before putting everything together in the crockpot to simmer for the day. When the veggies are almost done I threw them into the crockpot along with the bag of scallops from the freezer as well as a bag of shrimp. Hmmmm..... I thought. Better throw in that other bag of shrimp as well as the small pkg of scallops I bought. Can never go wrong in this house with lots of shrimp and scallops. I diced up the salmon fillets and added them to the mix which was now pretty much filling the the crockpot.Ooops musn't forget the leftover lobster meat I thought. I dumped in a half liter of coffee cream and a full liter of blend,added some fresh rubbed basil and some fresh cracked pepper (we use a four pepper blend of red,green,white, and black pepper corns) for some extra flavour. All was going according to plan and the pot was full to the brim. This was going to be good!
After about an hour when the crockpot had finally heated everything up to simmering temperature I gave things a little stir being carefull not to slop it over the sides of the now full pot. Since I was thirsty from all my hard work I decided to get a cold one from the fridge. When I opened the fridge door what did I see? How about a full bag of seafood chowder mix and two pkgs of crab flavoured pollock that I had forgotten to add. By now there was no room to add anything else to the pot but it just would not be the same without these last two items. In the end my "small" seafood chowder ended up filling an extra large crockpot as well as a large sized sauce pan on the stove-top. At least I know what's for supper tonight. And tomorrow night. And the night after that. And maybe even......:headbang
