Yes it can be undone, but you'll need to reconfigure the solder pads back to their original configuration, it's for that reason alone I don't remove anything from the board, merely lift one end of a component, be that a resistor or diode, of course a soldered jumper is easy enough to desolder.

I did this with a Kenwood TH F7E HT that I took with me whilst staying with a cousin in California, I wanted to access his local repeaters, however they were on 146MHz (2m in the UK is only 144/145MHz), a simple mod to open up the rig and simple mod to restore it back to how it should be for the UK ;)
