Talking about all of this good food in Texas is giving me and the wife feet itchy for Texas.
Probably Fly into Austin or San Antonio and rent a car for the drive to Corpus.
About 40-miles north of CC on IH-37:
Smolik’s Smokehouse in Mathis. TX-359. The new restaurant at the Interstate or a few miles into town for the original location.
“Best” smoked chicken.
My feeling about BBQ is that I want top tier. Smoliks does that.
What’s the very best BBQ house? I don’t care. Besides, I’d feel like I ought to start shooting neckbeards & green-hairs if it was a 1.5-hr wait in Austin to get in to a Texas Monthly magazine favorite. That means it’s BAD food.
As you know, BBQ is meant to be cheap. It isn’t, not anymore. So the places worth the stop (because I’m simply hungry) is the mark to hit.
Have a sit, rest a bit, get on with it.
The SA airport is on US-281/IH-37. Head straight south to Mathis. Exit, turn right. Make an almost immediate right. Mission accomplished. Proceed henceforth without pangs of soul-hunger.

Read up. It’s a drive and a wait after ordering. We used to go out for a Mexican breakfast before starting the drive from Corpus Christi.
1). The drive is significant in distance
2). The WAIT after ordering is significant. 45”.
Snoopys wont fall off your list, but it will be put in its rightful place by a fancier place not that much more expensive.
Most folks will complain it’s too far. Granted. The rest will complain it takes too long. Granted. (Why we ate after getting up and leaving house).
Folks will always ask if you’ve been there. That’s the thing to know.
(If it was me flying in to SA, I’d eat dinner at Mi Tierra and call it a day. Find a bar on the Riverwalk. And a room. Next day I’d spend a little meditative time at Mission Concepcion, and then proceed).
