For the waterfall, there are two thresholds that are generally adjustable in display settings somewhere, the low marker and the high marker.

Set the low marker so that 'no signal' shows close to black.

Set the high marker so that the strongest signals are at peak overload level for the signal display.

Play with them depending on band conditions the low water marker stays relatively consistent, but the high marker varies depending on if you have strong or weak signals.

When you get your head wrapped around this, you can make the display much more effective.
 
Watching watefalls

I like watching the waterfall, every once in a while you will see letters and numbers appear, usually 73 or someone using something other than psk31 will indicate what they are using.

You ought to check out 20 meters (14.070 mhz) usb and set the rig for about 3 khz bandwidth if it is adjustable. Any given evening, that 3 khz slice of 20 is wall to wall with psk31 (20 or more contacts going on). A simple dipole is all that is really needed. 99% of all you see using this mode is low power, generally 50 watts or less.

Another great band is the 30 meter band. PSK31 activity is usually clustered near 10.140 mhz.
